Chocolate pudding

Chocolate pudding

Serves 3



  • 1 ripe banana
  • 1 ripe avocado
  • 1⁄4 cup cocoa powder
  • 1⁄2 cup crunchy peanut butter
  • 1⁄2 cup agave syrup 1⁄4 cup soy milk or almond milk
  • 1⁄2 cup Soyatoo whipped soy cream


  • 7 tbsp sugar
  • 7 tbsp water
  • 120ml coconut milk
  • 1⁄4 tsp vanilla extract


  1. Place all pudding ingredients (except the cream) into a food processor & blend until smooth
  2. Spoon mixture into glasses or serving bowls & chill for 3 hrs
  3. When ready to serve, start making caramel sauce. Place sugar & water in a saucepan. Dissolve sugar & let bubble for 2 mins
  4. Add coconut milk & stir until mixed thoroughly. Turn down the heat & simmer for 10 mins or until thickened
  5. Remove from heat & mix in the vanilla extract
  6. Take glasses out of fridge and top with whipped cream & caramel sauce. Optional: decorate with chocolate shavings
