Mini quiches

Serves 4



  1. Add 1 cup of water to 100g of quiche mix and whisk well
  2. Put the mix in a blender or food processor with silken tofu and blend until smooth
  3. Add your fillings of choice to the quiche mix
  4. Line a quiche pan with shortcrust pastry
  5. Fill pastry with quiche mix and decorate with cherry tomatoes and pine nuts
  6. Bake at 180C for 30-40 minutes until firm and browned
