Makes 12 portions



  • 1 x 400g chilled can of chickpea water (separated from the chickpeas)
  • 3⁄4 cups of sugar
  • 3⁄4 teaspoon of cream of tartar



  1. Pre-heat oven to 150C
  2. Whip one can of chickpea water (from a can of chilled chickpeas) in a food processor until it has soft peaks
  3. Add sugar and cream of tartar
  4. Whip until sugar has dissolved and mixture forms stiff peaks
  5. Cover a baking tray with baking paper and dollop mixture into 12 portions
  6. Turn oven down to 100C and put tray in oven
  7. Cook for one hour
  8. Cool completely
  9. Top with whipped cream, passionfruit pulp and berries
