Roast Vegetable Salad

Serves 4


  • 1⁄2 head of cauliflower, in small florets
  • 1 large sweet potato, in 1cm cubes
  • 420g can chickpeas, drained and rinsed
  • 2 Tbsp olive oil 1 tsp salt
  • 2 tsp Deliciou Everything Seasoning
  • 4 cups baby spinach leaves


  • 2 Tbsp olive oil
  • 2 tsp lemon juice
  • 1 tsp Deliciou Everything Seasoning
  • 1 tsp maple syrup Salt to taste

1. Preheat oven to 200C

2. Arrange cauliflower, sweet potato and chickpeas evenly on a baking tray then toss with olive oil and salt

3. Roast vegetables until soft (approx 20 minutes), turning once

4. Meanwhile, make the dressing by mixing all ingredients together

5. Remove vegetables from oven and allow to cool for a few minutes then sprinkle them with 2 tsp Deliciou Seasoning and toss

6. Add spinach and roast vegetables to a bowl, add dressing and toss
